Practical Dining Answers

At the Booking Stage

Straightforward answers to the questions diners encounter when choosing a restaurant, reading a bill of fare, and communicating with the host desk.

Reservations, Timing & Etiquette

How can I tell if a restaurant cooks from scratch before sitting down?
Look at the scope of the menu. A brigade of three or four cooks cannot prepare 65 unrelated dishes fresh every morning. A focused menu of 4 starters, 4 mains, and 3 desserts—especially one stamped with the current date or week—signals that stocks, sauces, and pastries are made on-site.
When is the best time to telephone a restaurant with a specific question?
Call between 10:00 a.m. and 11:30 a.m. or between 3:00 p.m. and 5:00 p.m. Calling at 1:15 p.m. or 7:45 p.m. catches the front-of-house team in the middle of seating guests and running plates, when they have the least time to check detailed allergen sheets with the head chef.
Why do independent restaurants ask for credit card holds when booking?
Most independent neighbourhood restaurants operate on net profit margins of 4 to 8 percent. When a table of four fails to show up on a Friday night without cancelling, the perishables bought for those seats are wasted and the labour cost cannot be recovered. If your plans change, giving 24 to 48 hours’ notice allows the restaurant to re-book the table from its waitlist without charging a fee.
What is the fairest way to ask about bringing a special bottle of wine (corkage)?
Always ask at the time of booking whether the restaurant permits corkage, what the per-bottle fee is, and whether there is a limit. Good corkage etiquette means bringing a mature or meaningful bottle that does not appear on the restaurant’s own wine list, and ordering at least an aperitif or second bottle from their cellar.
How do I avoid a loud table if someone in my party uses hearing aids?
Add a concise note to your booking: "Quiet corner or perimeter table requested for a guest with hearing aids, away from speakers and the service pass." Because sound bounces less in corners than in the centre of a dining room, corner tables make speech significantly clearer.
Are walk-in seats realistic at popular neighbourhood restaurants?
Yes, if you time your arrival well. Many busy kitchens hold their bar or counter seats exclusively for walk-ins. Arriving within 10 minutes of opening (for example, at 5:30 p.m. or 6:00 p.m.) or after the first seating turns (around 8:45 p.m.) gives solo diners and pairs an excellent chance of sitting down immediately.
How should I interpret "Market Price" (MP) on a seafood or truffles menu?
Day-boat fish, live lobster, and wild mushrooms fluctuate in wholesale price daily depending on weather and catch volume. Always feel comfortable asking your server both the exact price per 100 grams and the approximate weight of the fish before ordering so there are no surprises when the bill arrives.
Can a tasting-menu restaurant accommodate one vegetarian at a table of omnivores?
Most kitchens offering a set tasting menu publish in advance whether they prepare a parallel vegetarian menu. However, they nearly always require 48 hours’ notice so they can prepare dedicated vegetable stocks and garnishes. Always check the booking terms before reserving.
What is the difference between an optional service charge and a cover charge?
A cover charge (such as the Italian coperto) is a fixed per-person fee for table linen, bread, and setup, which must be clearly stated on the menu. A discretionary service charge (commonly 10% to 12.5% in the UK) is added to the bill for staff distribution and remains legally optional if service fell short.
